20 High-Fiber Lunch Ideas That Aren’t Sad Desk Salads

Lunch has a fiber problem. Breakfast has oats, dinner has time — but lunch happens at a desk, between meetings, usually assembled in the morning rush or bought in a hurry. These 20 high-fiber lunch ideas are built for real workdays: they pack well, they don’t wilt by noon, and each delivers 7–15 grams of fiber — enough to kill the 3pm crash before it starts.

Pack-the-night-before

  1. Mason jar chickpea salad — dressing at the bottom, chickpeas next, greens on top. Still crisp at noon. ~11g.

Lunches that survive a desk and a microwave

Eating lunch at work has constraints a home lunch does not: it was made hours ago, it may get microwaved in a shared kitchen, and it has to be edible one-handed next to a keyboard. Not every high-fiber lunch handles that.

The rule that matters: anything crisp or leafy has to travel separately. Dressing poured on Sunday spends the week being absorbed by the grain, which is why the grain goes hard and the salad goes wet. Keep the dressing in a small jar and add it at the desk.
